Ingredients for 4 servings
eggplant
1-2 pcs. (500 g)
semi-hard cheese
200 g
walnuts
50 g
garlic
2-3 tooth. or to taste
mayonnaise
200 g
oil for frying
2-4 tbsp. l.
Step 1/5
Cut the eggplant into roughly 0.5cm-thick slices.

Preheat a frying pan with 1 tbsp. l. vegetable oil, put a few slices of eggplant and fry for 5-7 minutes on each side until ruddy. Place the finished slices on a plate with a paper towel to absorb the oil. Repeat with the remaining eggplants, pouring 1 tbsp. l. oil for frying each batch.

Grind the cheese on a coarse grater and put in a bowl.

Grind the nuts, pass the garlic through the press. Add the nuts and garlic to the cheese, season with mayonnaise and stir until combined.

Spread the filling over each slice of aubergine and roll into rolls in a direction away from you. Serve garnished with walnuts and fresh herbs.
