Recipe "Risotto with Beets and Brie Cheese"
Ingredients for 4 servings
ground round rice
320g
Parmesan cheese crumble

soft cheese with white mold "Brie"

dry white wine (optional)

Step 1/6
Prepare vegetable or light chicken stock and keep warmed while making risotto.
Step 2/6
Finely chop the onion, celery and garlic. Grate raw beets on a coarse grater.
Step 3/6
Heat olive oil in a pan or saucepan, fry onions and celery for 2-3 minutes, add garlic and continue to fry until soft.
Step 4/6
Add the rice and beetroot to the pan, stir thoroughly to combine the rice with the beetroot and cover each rice with olive oil from the pan. Fry for 2-3 minutes.
Step 5/6
Add wine (you can skip this step) and mix thoroughly to evaporate alcohol. When the wine is completely evaporated, reduce the heat to medium and start adding 1-2 ladles of broth, stirring the rice thoroughly. Continue adding the broth and stirring until the rice is cooked to al dente (this will take about 18-20 minutes).

Season the risotto with salt and pepper and add the parmesan generously, mix well. The texture should be creamy, but not porridge-like, and the rice will remain a little hard inside. Serve with chopped brie cheese, seasoning with black pepper and parmesan to taste.
