This delicate rice porridge will conquer even those who do not follow a vegan diet. Instead of blueberries, you can use any other seasonal berries or fruits: for example, baked apricots or figs.

round grain rice

water
150 ml
coconut milk
120 ml
icing sugar
15 g
vanilla pod

Keep the rice under running water until the starch is completely washed out.

Use a sharp knife to remove the flesh from the vanilla pod.
Step 3/5
Simmer the rice porridge over a mixture of water, coconut milk, icing sugar and vanilla over a low heat for 15-20 minutes.

Rinse and dry the blueberries. Finely chop the walnuts.
Step 5/5
Serve porridge with berries and nuts, garnished with mint.
