Edamame soybeans are a real storehouse of nutrients: they contain a lot of vegetable protein, fiber and a whole set of vitamins. You can use the product as a side dish or add it to a salad, as we did in this recipe.

Ingredients for 2-3 servings
avocado
200 g
edamame beans
80 g
fresh cucumbers
160 g
zucchini
140 g
arugula
½ up. (25 g)
spinach
½ up. (25 g)
fried pumpkin seeds
1 handful
For refueling:
honey
30 g
soy sauce
40 g
orange fresh
60 ml
olive oil

Step 1/6
Without defrosting, boil edamame in salted boiling water for 4-5 minutes. Tip the finished beans into a colander and rinse with cold water.
Step 2/6
Cut the cucumbers into a semicircle.
Step 3/6
Cut the zucchini into thin strips using a special grater or vegetable peeler.
Step 4/6
For the dressing, combine the honey, soy sauce, orange juice and olive oil.
Step 5/6
Put salad leaves, cucumbers, zucchini and edamame in a deep bowl, season with honey and orange sauce.
Step 6/6
Garnish with pumpkin seeds.
