A traditional Bulgarian salad of fresh vegetables and brynza that can be found on restaurant menus around the world. Good both on its own with a slice of fresh bread and as a light side dish for meat .

Recipe "Shopsky salad"
Ingredients for 2-3 servings
tomatoes
300g
cucumbers
200 g
sweet pepper
2 pcs.
red onion
1 small head
feta or cheese
100 g
pitted olives
10-12 pcs.
olive oil
3 tbsp. l.
wine vinegar
1 tbsp. l.
salt
to taste
parsley
a few twigs
Step 1/7
Wash the bell pepper, peel from the core and seeds. Wrap in foil or a baking sleeve and send to the oven, preheated to 200 ° C, for 20 minutes. Then let cool to room temperature. If there is no time, use ready-made baked pepper.
Step 2/7
Remove the stalks from the tomatoes and cut the vegetables into medium slices.

Peel and cut the onions into thin rings, and then quarter them.

Peel the cooled baked peppers and cut into medium slices.

Cut the cucumbers into rounds, finely chop the parsley.
Step 6/7
Combine tomatoes, peppers, cucumbers, onions and season with olive oil, vinegar and spices.

Crumble your hands on top or grate cheese over a coarse grater and garnish the salad with olives and parsley.
