This bright, summery, refreshing salad with an unusual citrus mint dressing will be equally good as a light quick lunch and as a spectacular snack that will decorate the festive table. Save to the recipe piggy bank!

Recipe "Salad with shrimp and mint dressing"
Ingredients for 2-3 servings
arugula
100 g
salt
to taste
lemon juice
1 tbsp. l.
orange juice
3 tbsp. l.
olive oil
3 tbsp. l.
fresh mint
1 pack
grapefruit
½ pcs.
king prawns
10-12 pcs.
Step 1/5
Thaw the shrimp beforehand and boil in boiling water for 2 minutes.
Step 2/5
For the dressing, beat the mint leaves, 2 tablespoons of olive oil, lemon and orange juice and salt in a blender. It should turn out to be a homogeneous gruel.

Clean the grapefruit from films and disassemble into medium-sized segments.
Step 4/5
Mix the washed and dried salad with the dressing ⅔ and put on a plate. Garnish with grapefruit slices on top.
Step 5/5
Mix the prawns with the remaining mint sauce and place on the lettuce leaves. Pour over the remaining olive oil.
