Dry the chicken legs thoroughly with paper towels. With a sharp knife, cut the tendons around the upper joint of each leg, then pull the meat along the bone down and form a ball from it.

Fold the prepared chicken legs into a large bowl, salt, pepper and add the garlic to taste. Pour the lemon juice over the chicken legs and two tablespoons of olive oil. Turn the legs over several times so they are completely covered with marinade.

Cover the bowl with cling film and leave the legs to marinate for 20-30 minutes. If you plan to freeze the legs, then do it after this stage and finish cooking according to the instructions below, when necessary.
