Recipe "Spicy pumpkin pancakes without a mixer"
Ingredients for 2 servings
Pumpkin
200 g
Milk
150 ml
Egg
1 pc.
Sugar
3 tbsp. l.
Vanilla sugar
1 tsp
Flour
130 g
Baking powder
1 tsp
Salt
0.3 tsp
Cinnamon
0.5 tsp
Turmeric
0.5 tsp
Nutmeg
0.5 tsp
Ginger
0.3 tsp
Step 1/5
Place 200 g of diced pumpkin in a bowl with 1 tbsp. l. water, cover with a plate or cling film and put in the microwave for 5-10 minutes (until the pumpkin is soft). Mash thoroughly with a fork and cool.
Step 2/5
In a deep bowl, mix 150 ml of milk, 1 egg, pumpkin puree, 3 tbsp. l. ordinary white sugar and 1 tsp vanilla sugar. Beat everything with a fork until the ingredients are combined.
Step 3/5
Separately, mix all the dry ingredients: 130g flour, baking powder, salt and all the spices. Sift the resulting dry mixture into a bowl of liquid ingredients and stir until smooth (no lumps).
Step 4/5
Add 2 tbsp. l. vegetable oil and mix again.
Step 5/5
Heat a frying pan over a medium heat without oil and use a large spoon to spread out the pancakes. Turn when bubbles appear on the surface of the pancakes (about 2-3 minutes on each side). Cook covered.
