Step 1/11
Beat butter at room temperature with sugar until white, fluffy.

Extinguish the soda with vinegar and mix with honey. Add the egg and yolk, stir again.

Add honey to the oil mixture, without ceasing to beat.

Swap the attachment for a spatula or hook, add the flour and spice mixture and knead the dough.

Wrap the dough in cling film or parchment and refrigerate for 1 hour.

On a floured surface, roll out the dough into a 4-5 mm thick layer and cut out the figures using molds.

Transfer them to a parchment-lined baking sheet and bake for 7-8 minutes at 190C. Leave the ready-made gingerbreads to cool completely.

Prepare the glaze: gently mix (but do not beat) all the ingredients with a mixer until a dense, snow-white mass is obtained.

Transfer about a third of the glaze to a piping bag, cut off the tip to make a thin hole and contour the biscuits. Hold your hand in the same way as when squeezing toothpaste onto a brush: close to the surface, but without touching it.

For pouring, add 1-2 teaspoons of warm water to the remaining glaze - the mass should become a little thinner than the contour, but not too much. Transfer it to a pastry bag and apply to the gingerbread cookies.

If desired, the glaze can be painted with gel dyes, apply voluminous patterns with an outline composition, decorate gingerbread cookies with confectionery sprinkles, etc.
