Ingredients for 8-10 servings
For the test:
whole grain wheat flour
250 g
carbonated spring water
500 ml
sunflower oil. high-olein
2 tbsp. spoons
unrefined cane sugar
1 tbsp. spoon
For the filling:
buckwheat kernel groats
150 g
mushrooms champignons royal
200 g
onions
0.5 pcs.
soy sauce
2 tbsp. spoons
sunflower oil. high-olein
1 tsp
Spices:
sea salt
to taste
black peppercorns mill
to taste

Mix flour, salt and sugar in a bowl. Gradually add carbonated water and mix until smooth. For thin pancakes, the dough should be runny, so add more water if needed. Add the butter to the dough.

Bake thin pancakes.

For the filling, slightly dry the buckwheat in a dry pan, then boil almost until cooked in a separate saucepan (for this, pour 2 to 1 with water and cook until the liquid evaporates).

Meanwhile, fry the chopped onions in sunflower oil, add the champignons and soy sauce cut into wedges, fry, stirring, until the mushrooms are ready (8-10 minutes). Add buckwheat to the pan and fry everything together a little more. Season generously with black pepper and add salt if needed. If the buckwheat is not completely ready, add water to the pan and bring to readiness. Buckwheat should not boil into porridge, but remain slightly elastic.

Wrap the filling in pancakes in any way you like and serve with sour cream, yogurt or lean mayonnaise sauce.
