Posole is a traditional Mexican thick hearty soup. It is made with meat (usually pork, but can also be chicken), corn and other vegetables. We also suggest adding "noodles" from dried tortilla and lime juice to it - it will turn out very tasty, spicy and rich in Mexican.

Cut the pork into medium-sized pieces. Pumpkin and carrots - cubes about 1x1 cm in size, peppers - strips, onions - pieces of medium size, garlic - finely.

Preheat 2 tbsp. tablespoons of vegetable oil, put pork in it and fry over high heat for about 3 minutes to seal the juices.

Add the onion and garlic, stir and cook over a high heat for about 2 minutes, stirring occasionally. Add the pumpkin, carrots, peppers and fry over a high heat, stirring, for about 2 minutes. Salt, mix. Add a pinch of serrano pepper, stir and cook everything together for a couple of minutes.

Pour all the ingredients with water so that the total volume is 3 liters. As it boils, remove the foam from the soup. After about 15 minutes, put the corn in a saucepan. In total, cook the soup for about 40 minutes until the vegetables are soft. At the end, squeeze the lime juice into it.

Heat a frying pan with 1 tbsp. a spoonful of vegetable oil. Cut the tortilla into thin strips and fry in oil until golden brown, stirring occasionally to dry.

Pour the soup into plates, add a little tortilla "noodle" to each, garnish with herbs and serve. When serving, you can put sour cream in the salt.
