Recipe "Wicker with raspberry jam and pistachios"
Ingredients for 8 servings
frozen yeast dough
1 pack (500g)
crimson jam
350 g
ground cinnamon
1 tsp
peeled unsalted pistachios
handful + to decorate
wheat flour

Step 1/7
Defrost the dough according to the instructions on the package. Put the jam in a ladle, add the ground cinnamon, stir and simmer until thick over medium heat for about 10 minutes, stirring occasionally. Cool down. Keep in mind: when the jam cools down, it thickens a little more.

Lightly dust the work surface with flour. Roll the dough into a rectangle measuring about 45 x 30 cm. Grind a handful of pistachios. Evenly distribute 2 tbsp. l. with a heap of ground nuts and print them into the dough using a rolling pin.

Brush the pastry evenly with the jam. If it is thick, you can lubricate to the edges.

Turn the dough layer with the long side towards you. Roll it into a tight roll in a direction away from you.

Cut the roll lengthwise with a sharp knife into 2 equal strips. Place them side by side with a slit up. Throw one strip through the other, then again and again and so on until the very end - as if you were braiding a braid. Make sure that the cut of the dough always "looks" strictly up.

Line a baking tray with baking paper. Transfer the resulting tourniquet to a baking sheet, roll into a ring and secure the ends. Leave in a warm place for about 30 minutes so that the workpiece increases slightly.

Preheat the oven to 170 ° C and bake the wicker for 25-30 minutes until ruddy. When serving, sprinkle with chopped pistachios.
