Recipe for Chocolate Ganache Pasta Cakes
Ingredients for 10 servings
almond flour

Sift the icing sugar and flour through a fine sieve.

Stir with a whisk.

Carefully separate the whites from the yolks. The yolk should not get to the protein.

Start cooking French meringue: beat the protein on medium speed, gradually pouring sugar in small portions in 3-4 doses.

Increase the speed and whisk to steady peaks for about 5 minutes. Add dye if desired.

Combine the dry almond mixture and meringue in 3 steps. Knead with a silicone spatula, moving it in a circle from bottom to top.

The finished dough (pasta) falls off the shoulder with a homogeneous ribbon. You can proceed to the capping.

Hold the piping bag perpendicular to the work surface and press evenly.

Fill a baking sheet covered with a silicone mat with almond blanks.

Tap the bottom of the baking sheet to remove air bubbles. Leave to dry at room temperature for 30 minutes.
