Recipe "Dumplings with cod and squid"
Ingredients for 8-10 servings
wheat flour, v/s
300 g + a little more for subsided
beet
2 pcs.
warm water
200 ml
yolks
4 pcs.
vegetable oil
30 ml
salt

cod fillets
400 g
peeled squid
1 pc.
celery stalk
1 pc.
salt

smoked paprika
2 g
vegetable oil for frying
2 tbsp. l.
cilantro
a couple of twigs
fresh garlic
1 clove
ground ginger

Step 1/10
Grate the beet on a coarse grater into a waffle towel and squeeze the juice into a bowl. You will need 120 ml for the test.
Step 2/10
Mix the flour, salt and yolks with your hands or using a mixer.
Step 3/10
Add vegetable oil, water, beet juice and knead the dough. Wrap it in a film and put it in the refrigerator for at least half an hour.

Clean the squid from chitin and skin.

Chop celery and onions into small cubes and fry in vegetable oil until golden brown.

Pass cod fillet, squid, celery and onions through a mincer with a fine grate.

Mix the resulting minced meat with chopped cilantro, garlic and spices.

Dust the work surface with flour and roll the dough into a thin layer.

Cut 4-5cm diameter mugs out of it and mould dumplings.

Cook the dumplings in salted boiling water for 4-5 minutes after surfacing.
