The dough for dumplings, prepared according to this recipe, is not too cool. Do not rush to clog it with flour, because thanks to the yolks it becomes smooth and elastic, perfectly rolls out in a thin layer and does not tear .

Recipe "Classic dumplings"
Ingredients for 8-10 servings
wheat flour
300 g + a little more for subsided
warm water
300 ml
yolks
4 pcs.
vegetable oil
30 ml
salt
3 g
homemade minced meat
1 pack (360 g)
onions
1 pc.
onion green
30 g
vegetable oil for frying
2 tbsp. l.
drinking water
100 ml
salt

freshly ground black pepper

ground coriander

Step 1/8
For the dough, mix the flour, salt and yolks with your hands or using a mixer.
Step 2/8
Add vegetable oil, water and knead the dough. Wrap it in a film and put it in the refrigerator for at least half an hour.

Chop the onions and fry well in vegetable oil until golden brown.
Step 4/8
Roll the fried onion through a meat grinder or punch with a blender until pasty.

Finely chop the green onions and mix with the minced meat, onions and spices.

Dust the work surface with flour and roll the dough into a thin layer.

Cut 4-5cm diameter mugs out of it and mould dumplings.

Cook the dumplings in salted boiling water for 5-6 minutes after surfacing.
