Recipe by Elena Rodionova. Those who have ever visited New Year's or Christmas in Europe have probably tried Linzer cookies, without which it is impossible to imagine these winter holidays there. This crisp, melt-in-your-mouth cookie is very hard to resist.

Ingredients for about 30 pieces of portions
wholegrain wheat flour, finely ground
200 g
cornstarch
50 g
almonds
150 g
coconut sugar
100-130 g
vanilla sugar
2 tbsp. l.
ground cinnamon
1 tsp
ground cloves at the tip of a knife
zest of one lemon
egg
yolks
3 pcs.
cold butter
130 g
plum jam with lemon and ginger

Flour, starch, ground almonds, sugar and vanilla sugar, spices, zest passed through a fine grater, mix well.

To the dry mixture, add the egg, yolks and diced butter.

Quickly form the dough, wrap it in cling film and set aside in the refrigerator for at least half an hour (you can spend the whole night). If the dough has stood for a long time, get it at least an hour before cooking cookies, if only half an hour, you can work with it immediately.

Roll out the dough 2-3 mm thick, cut out the paired cookies with a special mold or glass and a glass of smaller diameter.

Bake in an oven preheated to 180 degrees for 12-15 minutes. Next, cool the cooled cookies with jam, use only syrup. Cookies are stored in a closed container for about 2 weeks. A wonderful dessert and a gift for the most beloved!
