Recipe "Pasta with duck stew"
Ingredients for 4 servings
Paste
250 g
Duck spuds fillet
3 pcs.
Dry white wine
100 ml
Vegetable broth
1 L
Bunch of parsley
Bulb
Garlic
2-3 cloves
Olive oil
Freshly ground black pepper
Salt
Step 1/4
Finely chop the onions and season in olive oil, add finely chopped garlic.
Step 2/4
Chop the duck meat into rough minced meat with a heavy knife (or cut into small pieces) and add to the onions, fry over high heat, stirring.
Step 3/4
Pour in the wine, let it evaporate, then pour in a ladle of stock and turn down the heat. Simmer the covered stew over low heat for 2 hours, stirring occasionally and adding the stock as it evaporates .

15 minutes before cooking, pour in chopped parsley, salt and pepper to taste at the end. The finished sauce should be allowed to brew for at least an hour, or better more. It is very convenient to cook the stew the day before, and only heat it the next day. Boil the pasta in plenty of boiling salted water, toss with the duck stew - serve!
