Instead of wheat sheets, root celery is used, instead of tomato sauce - pumpkin, and béchamel sauce does not contain a single gram of flour and heavy cream. Their number of ingredients will turn out a small lasagne on the form of about 15x20 .

Ingredients for 4 servings
pumpkin sauce:

lemon juice

celery "dough":
celery root
half (approximately 400 g)
bean "bechamel" sauce:
white beans (can be replaced with canned beans)
1 cup
nutmeg
pinch
lemon juice
1 tsp
coconut oil
1 tbsp. l.
water
1/4 tbsp. l. (if necessary, then more)

Cut the pumpkin in half, grease the halves with coconut oil and bake in the oven until soft.

Put the pulp of the cooked pumpkin in a blender with garlic, lemon juice and salt. Beat. It will be sauce.

Peel the celery root, thinly slice. The knife must be sharp! Slices can be left round or cut in half.

Celery "dough" needs to be softened a little. To do this, boil a pan of water. Put celery slices into boiling water, boil for a few minutes. Remove with a slotted spoon, leave to cool.

For the "bechamel" sauce, boil the beans, after soaking overnight. You can use ready-made canned. In a blender, grind the cooked beans, nutmeg, lemon juice, coconut oil and salt. Add the bean water as needed. It should turn out a uniform white sauce.
