Olla podrida is one of the popular dishes of Spanish cuisine. In different regions, of course, they prepare it in their own way, but only the composition of the ingredients differs, and the essence is the same - this is meat stewed with vegetables. Probably, you have heard the name "cosido" - this is about it (from Spanish cocido - stewed, boiled). Whatever you call it, it's delicious and definitely worth a try.

Recipe "Olya podrida"
Ingredients for 4 servings
beef (pulp)
700 g
tomatoes
2 pcs.
onions
1 pc.
bell pepper
1 pc.
garlic
3 cloves
beans in c/s (red)
400 g
chorizo sausage
100 g
ghee
1 tbsp. l.
salt
1/2 tsp or to taste
ground black pepper
to taste
bay leaf
2 pcs.
parsley (dried)
1 tsp
smoked paprika
1/2-1 tsp
sugar
2 tsp
green onion
for decoration (optional)
cilantro
a couple of twigs
raw smoked sausage
for decoration (optional)
Step 1/8
Peel the onion and garlic and cut into medium-sized pieces. Put the melted butter and chopped onions and garlic in a saucepan, fry, stirring occasionally, for 1 minute.
Step 2/8
Remove the stalk and seeds from the bell pepper, cut the flesh into cubes and add to the vegetables. Put the bay leaf and cook together for 3-4 minutes.

Cut the chorizo sausage into rounds. Cut the films from beef, if any, and cut the meat into large cubes (about 3x3 cm).

In tomatoes, remove the stalks and dice the flesh.

Put meat and sausage to vegetables. Add smoked paprika, dried parsley, salt, pepper, sugar.

Add tomatoes, stir.

Put canned beans directly with the "juice," mix.
Step 8/8
Cover with water to cover the ingredients and simmer, covered, for 1 hour. Serve garnished with slices of raw smoked sausage (optional) and cilantro leaves. Optionally, you can also sprinkle with chopped green onions.
