Ingredients for 3 servings

Antarctic marbled perch
5-6 carcasses
Flour
1 tbsp. spoon
Salt
Freshly ground black pepper
Butter (for sauce)
1 tsp
Champignons (for sauce)
300g
Cream 10% (for sauce)
250 ml
Flour (for sauce)
1 tsp
Garlic (for sauce)
1 for a while
Nutmeg

Step 1/5
Clean the nototenia from scales and remove all black films in the abdomen, rinse, dry.
Step 2/5
Mix flour with salt and pepper, roll fish in this mixture, shake off excess.
Step 3/5
Heat the vegetable oil in a pan and fry the fish for 5-7 minutes on each side.
Step 4/5
Thinly slice the champignons, fry in butter, add flour, finely chopped garlic and nutmeg, salt, fry until golden.
Step 5/5
Pour in the cream, stir and simmer gently until thickened (about 5 minutes). Pour the sauce over the fish and serve with herbs!
