Recipe "Gentle pumpkin pancakes"
Ingredients
Pumpkin (peeled)
300g
Vegetable coconut milk (can be any)
200 ml
Egg
2 pcs.
Cane sugar (regular can be)
50 g
Flour
200 g
Baking powder
1 tsp
Vegetable oil
3.5 tbsp
Salt
to taste
Vanilla sugar/cinnamon
to taste
Step 1/4
Finely chop the pumpkin and send it to the microwave for minutes to 10-15 until soft. After the finished pumpkin, knead with a fork (you can blender, but it tastes better when small pieces of pumpkin remain).
Step 2/4
We knead the dough, at the very end adding dry ingredients and vegetable oil. The dough should turn out a little more liquid than on fritters. Let it brew for 10 minutes.
Step 3/4
Fry in a dry frying pan over medium heat (on induction - 5) until bubbles appear.
Step 4/4
We turn over and enjoy the most delicious pancakes! They fry as quickly as they are eaten.
