In a bowl, combine the flour, sugar and semolina.

Wash the apples, cut out the cores, and if you want, clean them. Grate the apples on a coarse grater.

Grease a baking dish and sprinkle with a little of the dry ingredient mixture to make a "French shirt." Then pour about a quarter more of the dry mixture onto the bottom of the mold. Lay out half the apples, flatten, sprinkle with cinnamon.

Put about half the mixture of dry ingredients on apples, level. Lay out the remaining apples, flatten again, sprinkle with cinnamon and top with the remaining dry ingredients.
