If you're used to considering pork too greasy an option for dinner, this recipe will make you change your mind. Thin strips of shoulder or neck, quickly fried over high heat, retain juiciness, but lose excess fat. And savory sauce with sesame oil, ginger and soy sauce turns this simple dish into an example of real Thai cuisine.
