Ingredients for 2-3 servings
milk
240 ml
cream from 30%
390 ml
white chocolate
50 g
milk chocolate
50 g
dark chocolate
50 g
gelatin
15 g
water
90 ml
sugar
50 g
Step 1/8
Soak the gelatin in cold water for 10-15 minutes.
Step 2/8
Finely chop the chocolate and divide into three containers. If you are using callets, you can skip this step.
Step 3/8
In a saucepan, mix the milk with the sugar. Place on a heat and bring to a boil, but do not boil.
Add the swollen gelatin to the hot milk and mix until dissolved.
Step 4/8
Divide the milk mass into three equal parts and pour each into a separate container with chocolate. Act quickly so that the milk does not have time to cool. Wait a little until the chocolate has melted from the heat of the liquid, then mix thoroughly until smooth and smooth. If there are any melted chocolate pieces left, use an immersion blender with an emulsion nozzle to punch through.
Step 5/8
Beat the cold cream with a mixer until thickened.
Step 6/8
Divide the whipped cream into three and add to each chocolate mass. Gently stir.
Step 7/8
Pour the mousse into layers: first dark chocolate, then milk and white on top. If done correctly, the creamy chocolate mass will be quite dense and the layers will not mix.
Step 8/8
Put the moulds in the fridge for a couple of hours until completely set.
