Ingredients for 2 servings

Lightly salted trout
150 g
horse-radish
30 g
gelatin
5 g
cream 10%
180 ml
Cucumber and avocado tar:
cucumber
1 pc.
avocado
1 pc.
onions shallot
fennel
olive oil
lemon juice
Step 1/4
Heat the cream to about 60S, add gelatin and stir until dissolved.

In a blender bowl, combine cream, fish and horseradish, whisk until pasty. Transfer the mixture to ramekins or glasses and refrigerate until completely set.
