Pancakes in milk, kefir or yogurt are unlikely to surprise someone, but ruddy millet pancakes may well earn the interest of guests. This Mordovian dish is called pachat. Millet pancakes are lush and satisfying, and their taste makes you look at the usual dish in a new way. At home, patties are generously lubricated with butter to make them even more appetizing and tasty.

Wash the millet thoroughly before cooking. Pour 100ml milk and 100ml water into a small saucepan. Pour the millet into the resulting mixture, put on the stove and bring to a boil. Salt, reduce the heat to a minimum and cook, stirring constantly, until thickened - the porridge should not turn out liquid. Do not add fire and do not be distracted, otherwise millet can burn. Remove the dish from the heat and leave in a cool place until cool.

In a separate bowl, beat the eggs, add flour, sugar and yeast. Pour in a litre of milk and mix well with a whisk. It is advisable to take milk slightly warm, but not hot - so the yeast will "wake up" faster. Leave the resulting dough on the table for 20 minutes.

Put the cooled millet porridge in the prepared dough. Gently mix, trying not to expel air bubbles that have formed from the work of yeast. Leave the dough on the table for another 20 minutes.

Heat a frying pan with a little oil over a medium heat. Pour the resulting dough into its center in small portions, forming neat thick pancakes from it. Fry on both sides until rich and ruddy, so they are fully baked. Pachat is much thicker than regular pancakes, which is why you need to cook them a little longer.
