With this recipe, you can make classic short-proofed cakes, but we suggest making mini cakes in muffin or small muffin tins. Decorate them with chocolate and nuts, take them with you to visit and treat loved ones and friends.

Recipe "Mini cakes on dry yeast"
Ingredients for 7-9 servings

500 ml

800-850 g
eggs
3 pcs. (1 protein + 3 yolks )

yeast

cured cranberries

Step 1/7
Heat the milk to a comfortable hand temperature, add 1 tablespoon of sugar and 1 tablespoon of flour, add yeast, stir and leave for 10-15 minutes.

If a foam "cap" appeared on the mixture, it means that everything is fine and you can continue.
Step 3/7
Beat 1 egg and 2 yolks with white sugar. Melt the oil in the microwave or low heat, do not bring to a boil. Add the egg mixture to the yeast, pour in the melted, but not hot oil, mix everything.

Add the sifted flour in small portions and stir into the dough so that it turns out thick enough, but still sticky. Then the cakes will be airborne.

Thoroughly knead the dough with a spatula, add nutmeg, chopped nuts and cranberries, mix and leave in a warm place for 30-40 minutes.

Preheat the oven to 180C. Arrange the dough in molds, filling them about half, and put in a hot oven. The baking time depends on the size of the cakes: 20 minutes will be enough for very small cakes for muffins, and ordinary cakes may need 40-50 minutes. Check readiness with a wooden skewer, it should come out dry from the middle of the cake. Cool the finished cakes, remove from the molds and leave, covered with a dry cloth for several hours or overnight. During this time, moisture in the test will be redistributed and the cake will be ready.
Step 7/7
To decorate, melt the chocolate drops over a very low heat or water bath, stirring constantly, add 1-2 tbsp. tablespoons of milk or cream. Pour over the chocolate cakes, garnish with nuts.
