Lobio is a traditional Georgian red bean dish. In the classic version, lobio is made from dry beans, it requires soaking. If you want to speed things up, use the finished canned beans, skipping the first two steps.

Ingredients for 4 servings
dry red beans
250 g
celery stalk
150 g
onions
1 pc.
garlic
4-5 denticles
walnuts

cilantro

Step 1/9
Soak the beans overnight or almost a day in cold water. If you soak more than overnight, change the water 1-2 times.

If the beans are still hard after soaking, pour fresh water over them and cook for about an hour, do not salt the water. Before cooking, rinse the beans under a stream of cold water.

Peel the onions and garlic, remove the green middles from the garlic. Dice onion and celery, chop garlic.

In a saucepan, heat the vegetable oil, fry the vegetables, stirring, then add all the spices except the salt. To taste, add a few rings of hot pepper or dry ground hot pepper.

Chop the walnuts with a knife, add to the pan.

Put the beans there.

Fill everything with water so that it covers the beans, and cook over medium heat at a slight boil for about 1.5 hours.

When the beans are completely boiled, remove the lobio from the heat. Add the cut cilantro, salt the dish to taste and stir. You can additionally crush the beans a little with a pusher.

Lobio is done. Serve it hot as a main course or cold as a snack.
