Ingredients for 4-5 servings
For the base:
Sugar cookies
200 g
Butter
60 g
For the filling:
Curd cheese
400 g
Cream 38%
100 g
Avocado
1 pc.
Mint
10 g
Lime
1 pc.
Gelatin
10 g
Cold water
40 ml
Vanilla sugar with spirulina
ad libitum
For decoration:
Strawberry
100 g
Lime
1 pc.
Mint
1 sprig
Step 1/5
Crush the biscuits into crumbs using a blender. Melt the butter, mix with the crumb and form a detachable base from the resulting mass. Put in the refrigerator.

Soak the gelatin in cold water and leave for 15 minutes. Then dissolve it in a microwave or water bath.

Mix curd cheese, cream, avocado flesh, lime juice. Grate the lime zest and grind the mint. Add vanilla sugar with spirulina for colour and sweetness, if desired.

Pour in the loose gelatin and blitz the mass with a blender until smooth.
Step 5/5
Put the filling in a chilled cookie base and refrigerate for 2 hours.
Garnish the cheesecake with strawberries, lime and mint leaves.
