A hearty and at the same time, light summer dish - tender meat in a thick and fresh tomato sauce with green beans .

Recipe "Summer beef shank stew"
Ingredients for 4 servings
beef shanks
1-2 pcs. (1 kg)
ripe tomatoes or diced tomatoes
3-4 pcs. (400 g)
green beans
400 g
bulbs
1-2 pcs.
bunch of parsley
thyme
a few twigs
broth (beef, chicken or vegetable)
150 ml
garlic
1-2 cloves
salt
pepper peas

You'll need a duckling or other thick-bottomed, walled utensils suitable for stewing.

Fry the shank in melted butter until ruddy, put on a plate.
Step 3/7
Finely chop the onion and fry in the remaining oil until clear, add a jar of tomatoes or fresh diced tomatoes, salt, add the peppers and thyme.

Cook for a couple more minutes over medium heat, then return the shank to the pan and pour in the stock or water.

Simmer the meat, covered, over low heat for 2-2.5 hours, until the meat is tender.

Wash the beans, cut off the hard ends, cut it into two or three parts, chop the garlic finely, add to the stew. Simmer for about half an hour more.

Serve the finished stew, sprinkled with parsley greens, with rice, young potatoes or just bread. Bon appetit!
