Recipe "Ice fish, baked under a dry crumb"
Ingredients for 4-5 servings

1 pack
edamame
300g
butter
50 g
breadcrumbs
3 tbsp. spoons
lemon
0.5 pcs.
garlic
2 cloves
parsley
2 sprigs
salt
to taste
Step 1/6
Pre-thaw the fish in the refrigerator for 4-5 hours or in ice water for 30 minutes right in the package.
Step 2/6
Carefully cut off the sharp fins, remove the head along with the gills. Rinse and dry the fish, rub with salt.

Put the breadcrumbs in a bowl, squeeze the juice out of half a lemon, add a pinch of salt and grate the garlic. Add the soft butter and stir with your hands or fork.

Cover the baking sheet with parchment, put the carcasses of the fish. Arrange the crumbs from the breadcrumbs on top. Place the fish tray in an oven preheated to 190C and bake for about 20 minutes.

While the fish is cooking, boil the water in a saucepan and pour in the edamame. Blanch the beans for 3-4 minutes, then drain and season with a little butter, add the chopped parsley and stir.

Serve the fish hot alongside the edamame.
