The right kutabs are fried without using oil, and as many different spring greens as possible are put in the filling - a truly healthy dish! I propose to make kutabs even healthier and cook them from whole grain flour, the taste will become even more saturated.

Ingredients for 4 servings
whole grain wheat flour
500 g
yogurt
50 g
butter
for lubrication
large bunch of greens (wild garlic, spring onions, cilantro, dill, tarragon, young nettle, sorrel, spinach)
200-300 g
small onion

Step 1/4
Add the maconi and salt to the flour, mix and knead the steep dough, adding a little warm water, knead well. The dough should turn out tight, just a little sticky to the hands. Cover the dough with film and leave for an hour and a half (or put in the refrigerator overnight ).

Finely chop the onions and fry in butter. Finely chop all the greens and mix with onions, salt to taste.
Step 3/4
Divide the finished dough into pieces of 50-60 g, roll each into a large thin circle using a rolling pin, put the filling on half a circle, fold the circle in half and pinch the edges carefully.
Step 4/4
Heat a dry pan well (pancake is great) and fry the kutabs until golden brown, about 2 minutes on each side. Grease hot kutabs with butter and stack on a plate.
