Ingredients for 6 servings
kefir 3.2%
200 ml
sour cream 15%
30 g
salt
pinch
sugar
1 tsp
baking soda
1 tsp
wheat flour
350 g
vegetable oil for frying
15 ml
For the filling:
granular cottage cheese
200 g
suluguni cheese
70 g
fresh parsley
30 g
fennel
20 g
Step 1/11
In a bowl, combine the warm kefir and soda and leave for 5 minutes. Then add sour cream, salt and mix until smooth.

Gradually add flour, kneading soft, elastic dough. It should not stick to your hands.

Cover the dough with a towel and leave for 20 minutes.

Grate suluguni cheese on a coarse grater, finely chop the greens.

In a bowl, combine cottage cheese, cheese and herbs.

Divide the dough into 6 equal parts, roll up the balls.

Roll each ball into a thin flat cake about 2 mm thick.

Put about 2 tbsp. l. filling, leaving edges. Cover with the other half and pinch the edges tightly. You can use a fork for a beautiful seam.

Heat a dry frying pan or brush it with a minimal amount of oil.

Fry the kutabs for 1-2 minutes on each side until golden brown.

Brush the finished kutabs with butter if desired and serve hot with sour cream or ayran.
