This recipe for Easter cake is simpler and less tasty than the traditional one, but it is prepared faster. Dry yeast can be used for it.

Ingredients for 6 servings

Step 1/9
Remove the products from the refrigerator in advance, sift all the flour. Mix 200g flour with yeast and salt.
Step 2/9
Add slightly warmed milk, mix and leave for half an hour in a quiet warm place.
Step 3/9
Rub eggs and yolks with sugar.
Step 4/9
Soak raisins in strong tea or aromatic alcohol. Push 2-3 boxes of cardamom (you can use ground, but fresh is much more fragrant if you are using saffron, pour a few stigmas with a tablespoon of boiling water and put to infuse for 3-4 hours).

Pour the yolks into the suitable dough, add the spices and knead the dough, adding a little of the remaining flour.

Knead the dough thoroughly until it starts to lag behind the hands and walls of the dishes. When it becomes soft and elastic, you can gradually add melted butter, each time carefully "driving" it into the dough - this is what gives the crumb of the finished cake a characteristic fibrillation.

Put a lump of dough in a saucepan, cover with a towel and put in a warm place for 40 minutes - an hour.
Step 8/9
Precipitate the risen dough, stir in the raisins and arrange in baking tins, filling no more than a third of the volume. Leave to proofed for half an hour.

Heat the oven to 200S, put the cakes, after 15 minutes reduce the heat to 180S and bake until tender (the wooden stick should come out dry from the middle), if the top burns, cover the cake with foil. Cool the finished cakes on their sides and cover with icing, decorate to your liking.
