2 whole eggs and 1 yolk (save the remaining protein for glazing) beat with sugar until fluffy.

Add the soft oil and continue whisking until smooth.

Add cottage cheese and grate zest from lemon (only the yellow part), beat until smooth. Rinse the raisins with boiling water, cut the candied fruits into cubes, add to the dough and mix.

Add flour, sifted with baking powder, and cardamom, mix.

Grease the mold with oil, sprinkle with cocoa if desired. Lay out the dough, smooth it well with a wet spatula or spoon. Place in an oven preheated to 170C for 25 minutes. Then increase the temperature to 180C and bake until tender. The baking time depends on the size and shape of the cakes: in a cupcake dish, the cake will need about 30 minutes, in a high cake dish - about 50 minutes. Check readiness with a wooden skewer. If the top burns, and the cake is not baked inside, cover the top with foil.

For the white glaze, beat the protein with a mixer, add icing sugar and squeeze about half a teaspoon of lemon juice, beat everything until smooth.
