Kuchmachi is a traditional Georgian hot snack made from offal. It is prepared from beef, lamb, pork offal - add hearts, stomachs, liver, lung. If suddenly you are confused by such a variety, we suggest preparing our version of kuchmachi from the usual chicken eviscerations - hearts and liver, but, of course, with a Georgian flavor.

Recipe " Kuchmachi"

Ingredients for 4 servings

broiler chicken liver
500 g
heart of broiler chickens
500 g
onion red
2 pcs.
walnuts
a small handful
large pomegranate
1 pc.
ground coriander
½ tsp
salt
to taste
khmeli suneli
1 tsp
cilantro
bunch
pomegranate juice or red wine
200 ml
vegetable oil

Cut the liver, removing the films and ducts. Cut off fat and blood vessels from hearts, remove blood clots if left.

Preheat a frying pan with vegetable oil and put prepared pieces of liver and hearts on it. Fry for 6-7 minutes, stirring occasionally. Add ground coriander, suneli hops, salt and cook for another 7-10 minutes over medium heat, stirring occasionally.

Pour pomegranate juice or red wine into the pan and simmer for about 10 minutes.

Cut the onions into feathers, finely chop the nuts. Add the onion and nuts to the ripples, stir and simmer everything together for about 7-10 minutes, stirring if necessary.

Clean the pomegranate, disassemble it into grains. Chop the cilantro finely. You can also add a little mint. Serve the kuchmachi garnished with pomegranate grains and chopped greens.
