Ingredients for 6 servings
puff yeast dough

sugar

water

cream 30%

almond flour

butter

almond petals

Step 1/7
Let the dough melt at room temperature. Put the dough in a baking dish with sides, form the sides of the dough.

Line the pastry with baking paper and pour in the beans/peas or special baking balls. Put the mold in an oven preheated to 180 ℃ and bake for 15 minutes, then take out the parchment with the load and bake for another 10-15 minutes without load. Remove the tin from the oven and leave to cool.

Put the sugar in the pan, pour in the water and heat over high heat until the sugar starts to caramelise. In parallel, preheat the cream in a saucepan.
