Recipe "Red caviar for vegans"
Ingredients for 4 servings
carrots
1 pc (100g)
beet
100 g (1 piece fine or 0.5 medium)
dried seaweed
2 sheets
agar-agar food
1 tsp
refined sunflower oil

Step 1/9
Pour vegetable oil into a glass and put in the freezer for 3-5 hours, it should become cold and thick. This may take several hours. If the oil is not cooled enough, you will not be able to cook vegan caviar!
Step 2/9
Grate carrots and beets. Squeeze the juice from carrots and beets into separate bowls, for example, using gauze. Do not mix, they will be needed to bring the decoction to the desired color.

Fill agar-agar with 60 ml of water, mix and leave to swell for 20 minutes.

Place the grated carrots, beets and nori leaves in a saucepan, add 200 ml of water and bring to a boil, reduce the heat and cook for 5 minutes.

Strain the broth well through the cheesecloth to make it more transparent. Add carrot or beet juice, bringing to the desired color.

Mix the broth with the agar and cook for 1-2 minutes. Cool down a little.

Pour the mixture into a saucepan with a spout or pour into a syringe without a needle. Carefully drip 1-2 drops into a glass with well-cooled oil, they will freeze and settle to the bottom.

Carefully remove the resulting "eggs" from the glass with oil.
