According to the classic recipe, beef cutlets are prepared from ground beef with the addition of onions, bread and spices and fried in a pan. We took Borodino bread, its tender sourness well emphasizes the taste of beef. And from spices, we recommend using coriander and garlic - they are quite bright and are combined with such minced meat .

Ingredients for 3-4 servings

Step 1/8
Cut the crusts off the bread, we won't need them. Soak the Borodino crumb for 10 minutes in water. For ground beef, the use of milk when soaking bread is unnecessary, creamy sweetness is useless to them.

Peel the onions, finely chop and fry in vegetable oil. Make sure that it does not burn, a slight golden color is enough. In addition, the onion must retain its juiciness, which will give the minced meat.

Squeeze the Borodino bread from the water. Mix the minced beef with the bread crumb and cooled fried onions. Sprinkle in the coriander and dry garlic, salt and pepper.

Knead the minced meat well with your hands.

Shape the patties - round or oval, as you prefer - by wetting your hands with water. You can form cutlets with a spoon, if you are comfortable.

Fry the beef patties in a preheated frying pan on both sides until ruddy, then bring to readiness, covered, for 10-15 minutes, reducing the heat to low.

Life hack: it is better to make the lid from a piece of parchment so that the crust of the cutlets does not get damp from the condensate.

Ready-made beef cutlets are best eaten with fresh vegetables and green salads - for example, from salad mixture, tomatoes and honey dressing.
