Ingredients, serves 8
cherry
300g
sugar
200 g
lime
0.5 pcs.
water
2 L
star anise and cinnamon
1 each (or a pinch of tea and coffee mix)
Step 1/7
Remove the bones from the cherries: this can be done with a special device or with a regular wooden skewer, simply by squeezing the bone with a sharp end. You can skip this step and cook the cherries directly with the seeds, but such compote cannot be stored for more than a year.

Peel the lime and cut into wedges.
Step 3/7
In a saucepan, combine sugar, lime, cherries and spices, pour in water.
Step 4/7
Bring to the boil and cook for 15 minutes.
Step 5/7
Prepare the jars by sterilizing them in the oven or over steam. Pour the hot compote into jars.
Step 6/7
Roll up or close with screw caps, turn the bottoms up and leave to cool.
Step 7/7
Store the finished compote in a cool dark place.
