Do not rush to throw away the remains of baked goose, duck or even lamb shoulder, because you can cook excellent sour cabbage soup from them. You can add almost any pickles to this first dish - cucumbers, tomatoes and even mushrooms, replace some of the cabbage with fresh white cabbage, or put slices of meat in a saucepan at the end of cooking. We do not recommend only adding potatoes to the soup: from a large amount of acid, it will cook for a long time and will turn out tasteless.

Recipe "Sour cabbage soup with baked poultry "
Ingredients for 6 servings
a skeleton of a baked goose with leftover meat
1 pc.
sauerkraut
300g
salted tomatoes
4-5 pcs.
olives
50 g
celery petiole
2 stems
parsley
bunch
fennel
bunch
black peppercorns
5-6 pcs.
bay leaf
1 pc.
salt
to taste
Step 1/6
Leftovers from baked poultry - meat and bones of the skeleton (fat and skin do not need to be used) - pour 6 liters of water and bring to a boil. Turn down the heat, add bay leaf, peppercorns. Cook at a very low simmer for about 45 minutes. You can optionally add a whole onion, peeled carrots and stems from spicy greens to the broth.

Strain the broth, throw away the bones and vegetables, leave the meat.
Step 3/6
Return the stock to the pan, add the sauerkraut and whole salted tomatoes.
Step 4/6
Cut the celery into cubes. Finely chop the dill and parsley. Put the celery in a saucepan and cook for about 20-30 minutes over medium heat.
Step 5/6
At the end of cooking, add olives, cook for a few more minutes. Turn off the heat and pour in the chopped greens. Taste the cabbage soup, salt if necessary.
Step 6/6
Serve the cabbage soup hot, adding meat cut from the bones, with fresh bread.
