Ingredients for 4 servings
eggplant
2 pcs.
sweet pepper
2 pcs.
tomatoes cream red
3-4 pcs.
young garlic
3 cloves
cilantro
bunch
tarhun (tarragon)
a few twigs
unrefined sunflower oil
to taste
freshly ground black pepper
to taste
salt
to taste
Step 1/6
Plant vegetables on skewers whole or put on a grate.
Step 2/6
Bake over charcoal, turning until the vegetable skin is blackened. Tomatoes will be ready in about 8-10 minutes, and eggplants will need a little more time - 15-20 minutes.
Step 3/6
Put the finished vegetables in a container or cover with a lid to soften the skin a little from the steam. Gently peel the tomatoes, peppers and aubergines.
Step 4/6
Dice all vegetables and fold into a salad bowl.
Step 5/6
Finely chop the young garlic, cilantro and tarragon, add to the vegetables.
Step 6/6
Salt and pepper the salad, season with vegetable oil. You can take any oil, we chose aromatic sunflower for Khorovats, because it works well with herbs and garlic.
