Traditional Karelian and Finnish open pies made from strong rye dough can be not only with potatoes, but also with rice. And if you put a piece of smoked or lightly salted red fish on top of a hot pie, then the dish becomes festive! Another traditional option is berry filling: lingonberries, blueberries, raspberries are suitable.

Recipe "Wickets with potatoes on rye dough"
Ingredients for 6 servings
Dough:
rye flour
300g
kefir
150 g
salt

vegetable oil

Filling:
potatoes
400 g
milk
100 g
butter
60 g
fennel

Step 1/10
Peel and boil the potatoes. Drain the water.
Step 2/10
Heat the milk with butter, without bringing to a boil. Push the potatoes into the puree with a pusher, adding hot milk, salt to taste.

Cover the puree with cling film (be sure, otherwise the top will turn) and leave to cool.

Mix kefir with flour, vegetable small and salt.

Knead the dough quickly, it should turn out smooth and elastic. Put the dough in a bag so it doesn't dry.

Finely chop the dill, mix with the cooled puree.

Pinch off a piece of dough weighing about 70 g and roll thinly, put about 2 tbsp. tablespoons of puree.

Pinch the edges with a pigtail so that you get open round "boats." Make the rest of the patties in the same way and place them on a baking sheet lined with parchment.

Brush the top of each pie with a teaspoon of sour cream. Send the wickets to the oven preheated to 220C and bake for about 25 minutes.
