Recipe for "Battered Zucchini"
Ingredients for 2 servings
medium-sized zucchini
1 pc.
flour
4 tbsp. spoons
egg
1 pc.
salt
1/4 tsp
milk
200 ml
vegetable oil
2-3 tbsp. spoons
fennel
for filing
Step 1/5
Wash the zucchini, cut off the stalks. Cut into 0.5-1cm thick rounds.
Step 2/5
Break the egg into a bowl, stir with a fork (no need to beat). Pour milk into a bowl with an egg, salt, add flour and stir with a whisk. The dough should be the consistency of kefir or liquid sour cream. If desired, add a few finely chopped dill sprigs to the batter, you can also put 1/2 teaspoon of sugar.
Step 3/5
Heat a frying pan with two to three spoonfuls of oil. Pick up a mug of courgette with a fork, dip in the dough so that it is completely covered with batter on all sides, and put in the pan. Repeat with the rest of the circles.
Step 4/5
Batter-fry the courgettes for 2-3 minutes on each side over medium heat and then place on a paper napkin to drain any excess fat. If fried for 2-3 minutes on each side, you will get slightly crispy courgettes (al dente). If you like softer vegetables, you can fry longer. Just make sure that the zucchini does not burn.
Step 5/5
Serve the courgettes, sprinkled with finely chopped dill. We recommend eating them with sour cream.
