Recipe for Priscilla's Perfect Ginger Truffles

Ingredients, serves 8

apple or cherry juice
2-3 tbsp (dry red wine can be used if desired)
dried cranberries
30 g
full-fat whipping cream
150-200 ml
dark chocolate
100 g
ginger biscuits
140 g
coconut chips
for sprinkling

In a small bowl, combine the dried cranberries and wine or juice and leave for 10 minutes. Then drain the remaining liquid and finely chop the cranberries. Set aside for now.

Crumble the ginger biscuits in a food processor or mortar and pestle until they have a fine, sand-like texture.

Pour the cream into a small saucepan and bring to the boil. Turn off the heat and add the chocolate. Stir vigorously until the chocolate dissolves, then set aside for 3 minutes to cool slightly.

Add the crumbled ginger biscuits and diced cranberries, stir until combined. It should turn out plastic, about sticky mass. If it crumbles, add a little more warm cream. Refrigerate the finished dough for 30-45 minutes.

Remove the dough from the fridge. Use your hands to pinch small pieces off it and roll them into balls. Roll each ball in coconut chips. If the dough is too sticky, refrigerate it for another 15 minutes or add a little crumbled ginger cookies. If it is too hard, leave it at room temperature for 30 minutes until it is easily molded.

Store the truffles in the fridge in a closed container. Allow them to rest at room temperature for 30-45 minutes to soften slightly before serving.

Tip: For a variety of flavors, you can add finely chopped nuts, dried apricots or prunes to the truffle dough.
