A multi-layer cake with the unusual name "gubadia" is a specialty of Tatar cuisine. Once not a single wedding could do without him, but now they bake it less and less at home. We prepare the gubadiya in our experimental kitchen and try to find out which version of the filling for it can be considered traditional .

raisin

1.5 teaspoons + to taste in the filling

fermented baked milk
0.5 cup
crumbly cottage cheese

flour
4 cups
kefir
300 ml
baking powder

For the dough, grate the cooled oil on a coarse grater, add salt and three glasses of flour. Grind with your hands until crumb.

Put baking powder in kefir and mix.

Pour the kefir into the flour mixture and knead the dough. If necessary, add more flour. The dough should be soft, but not sticky. Cover it with a napkin and leave for 20 minutes.

For the court. Put cottage cheese in thick-walled dishes, pour fermented baked milk, add sugar. Simmer for about one hour until you get a uniform consistency of the color of the melted milk and cool.

Boil rice in salted water until tender.

Dice the eggs.

Rinse the raisins and fill with hot water for 20 minutes.

Fry finely chopped onions along with minced meat, add salt and pepper. Cool.

Divide the dough into 2 parts (2/3 for the bottom of the pie, 1/3 for the lid). Roll out most of the dough and place in a thick-walled greased baking dish.

Put the filling in the following sequence: 1/3 rice - court - 1/3 rice - minced meat - eggs - 1/3 rice - raisins.

Melt the butter and water the filling.

Roll out the remaining dough and cover the cake, pinching the edges.

Grease the surface with a beaten raw egg, pierce in several places with a fork or toothpick and send to the oven. Bake for about 50 minutes at 180 degrees.
