Sugar
3 tbsp. spoons
Red wine
200 ml
Juice of half a lemon
Water
300 ml
Cinnamon stick
A few peppercorns
Ice cream for serving

Mix the water with the sugar and lemon juice, add the cinnamon and pepper and cook until the sugar dissolves, bring to a boil and pour in the wine.

Put pears peeled in the wine and cook for 30 minutes over low heat, turn off the heat and leave to cool completely (you can leave overnight).

Remove the pears and spices, and boil the wine with sugar over high heat, stirring constantly. Fluid should remain about 150 ml .

Reduce heat to a minimum and put broken chocolate, stir until completely dissolved.
