Recipe "Grillage"

Prepare the baking sheet by covering it with baking parchment or covering with a silicone mat.

Put sugar in a heavy-based pan or saucepan, add water.

Add the lemon juice. Bring the mixture to a boil and cook over medium heat. Once the mixture starts to brown, sample for caramel. With a spoon, take a little caramel and drip on a cold plate or a piece of ice: if the caramel is ready, then the drop, setting, becomes brittle and hard. During the test, remove the pan from the heat, the caramel can be burned very quickly.

In parallel with the preparation of caramel, chop nuts and heat them in a pan or in the oven, so they are better mixed with caramel.
