Pour in the hot milk, stirring constantly (easier with a mixer), stir until smooth, strain through a sieve and leave for half an hour.

Fry as usual, in a very hot frying pan, you need to grease with oil, such pancakes are not too strong. The color of ready-made pancakes is very rich, so almost brick, maybe that's why they are called red?

Mushroom sauce is perfect for buckwheat pancakes: finely chop the onions and fry in butter, stirring, add flour, stir, and then add the chopped mushrooms. You can add a little dried mushrooms, if any, after soaking them - the sauce will be very fragrant!

Fry the mushrooms with the onions for a minute and pour in the cold cream in a thin stream, stirring constantly. Bring the sauce to a boil, reduce the heat and stir occasionally, the sauce is ready when thickened.
