Hot sandwiches with goat cheese and cranberries will not only diversify your breakfast or snack. They are great as a festive treat too.

Ingredients for 2 servings
goat's milk cheese
100 g
brioche slicing
50g or to taste
walnuts
2 tbsp. spoons
cranberry
3 tbsp. spoons
sugar
1 tbsp. spoon
butter at room temperature
5-7 g
mint
for decorating
Step 1/8
Pour boiling water over the nuts for about 15 minutes until the water cools down.
Step 2/8
Put cranberries in a small saucepan, add 2 tbsp. spoons of water and 1 tbsp. spoon of sugar.
Step 3/8
Bring to a boil and cook for about 5-7 minutes over medium heat to evaporate the water as much as possible. Stir gently from time to time (careful: cranberries are likely to burst in the process, and juice will splash slightly).

Grind the resulting cranberry sauce with a blender until smooth.

Place the brioche slices on a baking sheet lined with parchment. Lightly brush them with butter and place the walnuts on top.

Cut the brynzu into slices and place on nuts. Bake the sandwiches in the oven preheated to 200C for 10 minutes.

Cut each square sandwich into two triangular ones, pour over the cranberry sauce.
Step 8/8
Garnish with mint and serve.
